Blue Chicory (Cichorium intybus) is a hardy perennial wildflower prized for its brilliant sky-blue flowers that open along tall, wiry stems through the summer. Each bloom lasts only a day, but plants produce a steady succession of flowers that create a loose, airy look in meadows, wildflower patches, and cottage-style borders. The dandelion-like blooms are a familiar sight along country roads and are highly attractive to bees, butterflies, and other pollinators.

This heirloom, non-GMO variety is easy to grow from seed and adapts well to a range of garden settings. Chicory works beautifully in pollinator gardens, naturalized areas, and cut-flower plantings, and its deep taproot helps it tolerate dry conditions once established. The young leaves are also traditionally used as a salad green, though the plant is grown primarily for its ornamental blue flowers.

Planting & Care

Sow chicory seeds directly in the garden after the last frost, or start them indoors 4 to 6 weeks before transplanting. Press seeds lightly into the soil surface and keep them moist, as light aids germination. Thin seedlings to the recommended spacing once they are a few inches tall. Chicory prefers a sunny spot with well-drained soil but will tolerate poorer ground.

Water regularly during the first season to help plants establish. Once established, chicory needs little supplemental water except in prolonged drought. Deadhead spent blooms if you want to limit self-seeding, or allow flowers to go to seed to encourage naturalizing in meadows and wildflower areas. Cut plants back in late fall if desired.
