Catskill Brussels Sprouts are a classic heirloom variety prized by home gardeners for their dependable yields and excellent cold hardiness. This open-pollinated selection produces sturdy, upright plants that develop firm, flavorful sprouts along a thick central stalk, offering a long harvest window that often extends into late fall and early winter. The sprouts are ideal for roasting, steaming, sautéing, and freezing, making them a versatile addition to the kitchen garden.

Because Catskill is exceptionally cold tolerant, it performs well in fall and winter gardens in many regions, and the flavor of the sprouts is often enhanced by light frost. Whether you are growing a small backyard patch or a larger vegetable plot, these heirloom seeds provide a rewarding cool-season crop that stores well after harvest.

Planting & Care

Start Catskill Brussels Sprouts seeds indoors 6-8 weeks before the last expected frost, or sow directly in the garden in late summer for a fall crop. Plant seeds about 1/4 to 1/2 inch deep in a seed-starting mix or prepared garden bed. Keep the soil evenly moist during germination, which typically occurs in 7-14 days at soil temperatures around 65-75°F. Once seedlings have several true leaves and nighttime temperatures are consistently above 40°F, harden them off and transplant to the garden.

Space plants 18-24 inches apart in rows 24-36 inches apart. Brussels sprouts perform best in full sun with consistent moisture and fertile soil. Side-dress with compost or a balanced fertilizer as plants grow. As the stalks begin to form sprouts, you can remove the lower leaves to encourage development. For best flavor, harvest sprouts from the bottom of the stalk upward after they firm up, and allow plants to experience light frost before final harvest if possible.
