Planting & Care
Start Catskill Brussels Sprouts seeds indoors 6-8 weeks before the last expected frost, or direct sow in the garden when soil temperatures are at least 50°F. Plant seeds about 1/4 inch deep in a seed-starting mix. Keep the soil consistently moist but not waterlogged. Once seedlings have 2-3 true leaves, harden them off and transplant to the garden after the last frost date. For fall harvests, start seeds in mid to late summer.
Brussels sprouts thrive in fertile, well-drained soil with a pH of 6.0-6.8. Water regularly to keep the soil evenly moist, and mulch to conserve moisture and suppress weeds. Fertilize with a balanced vegetable fertilizer according to package directions. As the plants grow, you may need to stake them if they become top-heavy. Remove any yellowing lower leaves to improve air circulation. Harvest sprouts from the bottom of the stalk upward when they are firm and about 1-2 inches in diameter. Frost improves their flavor, so leave plants in the garden for a light freeze if possible.
