Spaghetti Winter Squash is a unique heirloom variety prized for its stringy, spaghetti-like flesh that holds its shape when cooked. The oblong fruits develop a pale yellow rind and store well into winter, making them a favorite for home gardeners who want a versatile, long-lasting harvest. Whether baked, roasted, or used as a low-carb pasta alternative, this winter squash adds garden-to-table value.

Grown as an annual vine, spaghetti squash thrives in full sun and well-drained soil. The plants produce vigorous vines and yellow flowers before setting fruit. This non-GMO heirloom variety is open-pollinated, allowing gardeners to save seeds for future seasons.

Planting & Care

Sow spaghetti squash seeds directly outdoors after the last frost date, when soil has warmed to at least 70°F (21°C). Plant seeds about 1 inch deep in hills or rows, spacing 24-36 inches apart. Provide consistent moisture during germination and growth, but avoid waterlogging. Mulching helps retain soil moisture and suppress weeds.

As vines grow, provide ample space or a trellis for support. Harvest fruits when the rind is hard and the stem begins to dry, typically 80-100 days after planting. Cure fruits in a warm, dry place for about a week before storing in a cool, dark location.
